I stopped drinking a few years ago, and the thing I missed most wasn’t wine or cocktails… it was a good Pina Colada on a hot day. Store-bought mixes tasted like artificial garbage, and my homemade attempts (from other recipes) always came out watery and sad. It took me a dozen tries on my own, but I finally figured out how to make one that’s actually creamy and fruity.

This isn’t your typical mocktail that tastes like it’s missing something. The coconut cream, frozen pineapple, and pineapple juice create that thick, creamy consistency you actually want in a Piña Colada. Plus, you can spike it with non alcoholic rum for extra authenticity, or keep it simple. Either way, it’s good enough that everyone will want the recipe.

Pina Colada Mocktail Ingredients

Here’s everything you will need to make this recipe and a few important notes, so keep reading!

  • Pineapple: I recommend using fresh pineapple, cut in 1-inch chunks, and frozen overnight. I like to save a couple wedges to use as a garnish. For the pineapple, you can also use canned pineapple, or frozen pineapple. Just know the sweetness level will vary.
  • Coconut Cream: Coco Re’al has the best consistency and it’s got a little sugar in it for the perfect balance of flavor.
  • 100% Pineapple Juice: I use canned juice, but bottled juice works as well. Just make sure it’s 100% juice.
  • Ice Cubes
  • OPTIONAL Non Alcoholic White Rum: Please refer to the next section for more information.

The Best Non Alcoholic White Rum Substitutes

A classic Pina Colada contains white rum and there are a few options to choose from. I recommend a splash or two of Lyre’s White Cane Spirit, but other options include Arkay non alcoholic white rum, and Marie Laveau non alcoholic spiced spirit. Choosing any of these will make this recipe taste even closer to a Pina Colada with alcohol.

Ingredients needed are pineapple chunks, pineapple juice, coconut cream, and ice.

How To Make A Pina Colada Mocktail

Here’s a quick summary of the steps, so you can see how easy it is to make. You’ll also need a blender or food processor, glassware of your choice, and straws. You’ve got to grab some boba straws for frozen drinks, they’re large and it makes it so much easier to drink!

1. Blend and Troubleshoot. Blend the frozen pineapple, coconut cream, pineapple juice, and ice until smooth. Taste test and troubleshoot your pina colada mocktail so it’s just how you like it (more information in the next section).

2. Pour and Garnish. Drizzle more coconut cream in your glasses and pour in the Pina Colada Mocktail. Garnish with fresh pineapple wedges and serve with a straw.

Troubleshooting Information

Making frozen drinks with fresh pineapple is not an exact science and do require troubleshooting. Fresh pineapples all differ in texture, sweetness, and level of ripeness, so use the information below to make yours perfect!

  • Too thick? Add a tablespoon of pineapple juice until desired consistency.
  • Too thin? Add a 1/4 cup of frozen pineapple chunks until desired consistency.

Can I blend up the Pina Colada Mocktail ahead of time?

I recommend blending these up as you are serving them. This mocktail is a slushy consistency and doesn’t store well in the refrigerator or freezer. Serving it as you drink it, and immediately, is best.

I want this to have alcohol in it, what should I add?

A classic Pina Colada has rum (white or dark) in it. You can also add coconut rum too.

  • 2 ½ cups fresh pineapple - cut in 1-inch chunks and frozen*
  • 1 cup ice cubes
  • 4 ounces 100% pineapple juice
  • 2 ounces coconut cream - Coco Re'al is a MUST*
  • pineapple wedges - for garnish
  • 4 ounces non alcoholic white rum - OPTIONAL, Lyre's White Cane Spirit

INSTRUCTIONS
 

  • Cut fresh pineapple into 1-inch chunks, place in a single layer on a baking sheet and freezer overnight (or until the chunks are frozen solid).
  • Add the frozen pineapple chunks, ice cubes, pineapple juice, coconut cream, and non alcoholic white rum (optional) to a blender or food processor. Blend until smooth and all the ingredients are fully incorporated.
  • Taste test and troubleshoot. Too thick? Add a tablespoon of pineapple juice at a time until desired consistency is reached. Too thin? Add a 1/4 cup of frozen pineapple chunks at a time until desired consistency is reached.
  • Drizzle extra coconut cream on inside of the glass and pour the Pina Colada Mocktail. Garnish with fresh pineapple wedges, add a straw, and serve immediately.

  • Swap the fresh pineapple for canned pineapple or already frozen pineapple.
  • Make your own Coco Re’al by using 2 tablespoons of canned coconut milk and 2 tablespoons of granulated sugar. You can also replace the Coco Re’al with coconut simple syrup.

    These mocktails are fruity, creamy, and so delicious! I’ve got nothing against a traditional pina colada, but there are plenty of nights when we want something fun and tropical and don’t want to drink. These are so easy I’ve made a point to just keep the ingredients on hand at all times.

    The Christmas before I got pregnant, I had a moment with pina coladas. I had a random craving yesterday and, since I’m still nursing, I wanted to do a mocktail. You are my go-to mocktail girl. This was another fabulous recipe. Decadent and refreshing!
