This Pina Colada Mocktail is bursting with tropical fruity flavor. It's thick, creamy, and never watery. Plus you can add a splash of non alcoholic rum!
Cut fresh pineapple into 1-inch chunks, place in a single layer on a baking sheet and freezer overnight (or until the chunks are frozen solid).
Add the frozen pineapple chunks, ice cubes, pineapple juice, coconut cream, and non alcoholic white rum (optional) to a blender or food processor. Blend until smooth and all the ingredients are fully incorporated.
Taste test and troubleshoot. Too thick? Add a tablespoon of pineapple juice at a time until desired consistency is reached. Too thin? Add a 1/4 cup of frozen pineapple chunks at a time until desired consistency is reached.
Drizzle extra coconut cream on inside of the glass and pour the Pina Colada Mocktail. Garnish with fresh pineapple wedges, add a straw, and serve immediately.

Swap the fresh pineapple for canned pineapple or already frozen pineapple.
Make your own Coco Re'al by using 2 tablespoons of canned coconut milk and 2 tablespoons of granulated sugar. You can also replace the Coco Re'al with coconut simple syrup.
