I know what you are thinking; why lavender?! Does she want this lemonade to taste like a bar of grandma’s soap?! Hear me out. The lavender in this is sweet and fragrant but not overpowering. The lavender and coconut flavors are so delicate and the perfect addition to a sweet and tart lemonade.
It is inspired by one of my favorite drinks at a local coffee shop here in Arkansas, with a few tweaks of course. I love to support local but also wanted a version I could easily make at home and share with you all. For another refreshing summer beverage check out my Creamy Mango Lemonade!
What Are The Best Ingredients To Use?
- Lavender Simple Syrup: It is best to make your own with food grade lavender, it is so simple and worth the extra effort (more details below). You can use a store-bought lavender simple syrup.
- Lemonade: I prefer lemonade mix and water with a squeeze of fresh lemon. Other options are lemonade concentrate, freshly squeezed lemonade, or store-bought lemonade in the cold section.
- Coconut Milk: Unsweetened coconut milk is best here. I use the variety which comes in a carton and is found in the cold section with the other milks. It is better than canned coconut milk because it has a thinner consistency and mixes with the other ingredients better. Canned coconut milk had a tendency to curdle and separate quite a bit.

How To Make The Lavender Simple Syrup
Simple syrup requires two ingredients: equal parts sugar and water. Bring the mixture to a boil and you have simple syrup that will last in your refrigerator for up to three months. Simple syrups are used to sweeten tea and coffee, add flavor to alcoholic drinks, moisten cake layers, etc.
Anyways, to make a Lavender Simple Syrup we place the purple lavender flowers in the sugar water mixture once it has come to a boil. Cover the pot and allow it to steep for at least thirty minutes. Remove the lavender flowers and pour into a glass container. Again, this Lavender Simple Syrup will last up to three months in a glass, air-tight container.
TIP: Not all lavender is food grade so be sure yours specifies that it is food grade.
Shaken Versus Stirred
Now that the Lavender Simple Syrup is done you will add two to three tablespoons of it to a glass with ice. Add the lemonade next and the coconut milk last. You will see beautiful layers at this point. Be sure to mix up the Lavender Coconut Lemonade until it turns a pale yellow color and it’s done. I will let you decide whether or not to shake it or stir it!

Lavender Coconut Lemonade
INGREDIENTS
Lavender Simple Syrup
- 2 tablespoons lavender - food grade
- 1 cup water
- 1 cup granular sugar
Lavender Coconut Lemonade
- 2-3 tablespoons Lavender Simple Syrup
- 6 ounces lemonade
- 2 ounces coconut milk - unsweetened
INSTRUCTIONS
Lavender Simple Syrup
- In a small saucepan, add the granular sugar and water.
- Heat over medium heat until the sugar is dissolved and the mixture is fairly clear.
- Increase heat to high until mixture comes to a boil.
- Remove from heat, add lavender and stir it into the syrup.
- Add lid to the saucepan and allow the lavender to steep in the sugar syrup for thirty minutes.
- Once finished pour the Lavender Simple Syrup over a mesh strainer and into a glass container to remove the lavender.
- Screw lid onto your container of Lavender Simple Syrup and refrigerate.
Lavender Coconut Lemonade
- To a glass add ice, Lavender Simple Syrup, lemonade, and coconut milk. Stir until combined and drink!

Can I substitute sugar for Monk fruit?
I have not tried this. I would advise you use 1/3 cup or 1/2 cup monk fruit sweetener as it is much sweeter than granular sugar.
