Ingredients for Ricotta Dip and Roasted Grapes

For the Ricotta Dip you will need:

  • Ricotta Cheese: Full fat gives the best dip consistency as well as taste.
  • Olive Oil
  • Thyme: Fresh and chopped. You can alternatively use 1 teaspoon of dried thyme.
  • Garlic: Fresh and finely minced. You can alternatively use 1 teaspoon of garlic powder.
  • Salt and Pepper

For the Roasted Grapes you will need:

  • Red Grapes: Washed and completely dry.
  • Olive Oil
  • Salt and Pepper

Serve the dip with toasted baguette slices. I like to cut mine at 1/2 inch slices.

How To Make Ricotta Dip with Roasted Grapes

This recipe has three main steps. But don’t worry, they are super quick and easy to do.

  1. Roasting the Grapes: Combine your ingredients together in a baking dish, pop in the oven, take out once they burst and are roasted.
  2. Blending the Ricotta Dip: Throw your ingredients in a food processor or blender, pulse until smooth and well combined.
  3. Serving: Spoon the dip onto a serving dish and top with roasted grapes, olive oil, and thyme. Put your toasted baguette slices on the slide.

What if I do not have a food processor or blender?

The alternative is to whisk it, and a lot. Your dip will not be as smooth as what is pictured but still delicious. You will also want to make sure your thyme and garlic is super finely minced since you will not have the food processor or blender to break it down even smaller.

Do I have to use toasted baguette slices?

Not at all, although I highly recommend it. You can also use ciabatta bread, pita bread, naan flatbread, sourdough, crackers, chips, and even vegetables.

INGREDIENTS
 
 

Ricotta Dip

  • 15 ounces ricotta cheese; - full fat
  • 2 tablespoon olive oil
  • tablespoon thyme; - freshly chopped
  • 2 clove garlic - minced
  • 1 teaspoon salt
  • ½ teaspoon pepper

Roasted Grapes

  • 1 lb red grapes
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • baguette slices - toasted

INSTRUCTIONS
 

Roasted Grapes

  • Preheat oven to 400 °F.
  • In a baking dish, toss together grapes, olive oil, salt, and pepper.
  • Place in the oven to roast for 20-30 minutes, or until the grapes have burst.
  • Set aside to cool to room temperature.

Ricotta Dip

  • To a food processor or blender add ricotta cheese, olive oil, chopped thyme, minced garlic, salt, and pepper.
  • Pulse until the mixture is smooth and all ingredients are distributed evenly.
  • Spoon Ricotta Dip onto a serving dish, top with roasted grapes, and fresh thyme.
  • Serve with toasted baguette slices.

    I had this recipe from about five years ago, but I don’t remember where I got it from. The first time I served it, people raved about it, even people that were not familiar with Ricotta cheese. Delicious. As a kid, being Italian, my father used Ricotta cheese to make “fritatas” on Easter Sunday. He was a master at it, and we loved it. I use Ricotta cheese any time I can. It is truly underrated.

    Wow this is so good! Light and creamy with just the right amount of flavor. I made a double batch among a few other apps and this was the first thing gone. I also loved that i could make it all earlier in the day. Thank you!
