This Lavender Simple Syrup is floral, sweet, and dye free! It’s the perfect addition to lemonade, mocktails or cocktails, iced tea and even lattes.
I’ve also included a sugar free option so you can enjoy all the beautiful lavender flavor without any of the sugar.
If you’ve ever written off lavender as a flavor, I completely get it! For the longest time I thought it was meant for soap my grandma would use. But one sip of a lavender pecan latte completely changed my mind, and I’ve been obsessed ever since. And trust me, culinary grade lavender is nothing like what you’re imagining.
That’s exactly why this Lavender Simple Syrup is one of my favorites. The homemade version is so much better than anything you’ll find at TJ Maxx or the grocery store, and you’re in full control of the ingredients. We’re talking organic lavender, zero artificial dyes, and absolutely no preservatives. Plus, it can be sugar free so everyone can enjoy it without missing out on any of that sweet floral flavor.

Lavender Simple Syrup Ingredients
Here’s everything you will need to make this recipe and a few important notes too. Keep reading!
- Sugar: This recipe works great with cane sugar or allulose, a sugar free sweetener. You could even use a combination of the two if you want a reduced sugar syrup.
- Water
- Lavender Buds: I recommend finding food grade lavender that is organic and non-GMO. I harvest mine from my garden, but before I had big beautiful lavender plants I used Kate Naturals brand.
How to Make Lavender Simple Syrup
1. Boil and Steep. In a saucepan boil the sugar or allulose, water, and lavender buds for 5 minutes. Remove from heat, cover the saucepan with a lid and let the mixture steep for 10 minutes.
2. Strain and Store. Strain away the lavender buds and pour the syrup into your container. Allow it to cool before using or refrigerating.

Storing Information
Since this Lavender Simple Syrup doesn’t have preservatives like the store-bought stuff, it needs to be keep in the refrigerator and used within 3 months. I always recommend checking for mold and spoilage. If it has a foul odor, there’s visible green or black mold growing inside the jar, or there is floaty stuff in the syrup, throw it out!

This Lavender Simple Syrup goes great in sparkling water, lemonade, cocktails or mocktails, tea, and even coffee based drinks like lattes or cold brew. In terms of its flavor profile, the floral sweet notes compliment lemon or orange, blueberry, strawberry, honey, vanilla, and even ginger.
I use this syrup in my Lavender Coconut Lemonade and Sparkling Lavender Mocktail. But you could also add it to my Dandelion Lemonade, Blueberry Iced Tea, a Gin and Tonic Mocktail, or State Fair Lemonade.

Lavender Simple Syrup
EQUIPMENT

INGREDIENTS
- 1 cup sugar - cane or allulose for sugar free syrup
- 1 cup water
- 3 tablespoons food grade lavender buds - organic, non-GMO
INSTRUCTIONS
- To a small saucepan add the sugar or allulose, water, and lavender buds. Over high heat, stirring occasionally, bring to a boil. Once boiling, allow it to boil for 5 minutes.
- Turn off heat, cover the saucepan with its lid, and allow the syrup to steep for 15 minutes.
- Strain away the lavender buds using a fine mesh strainer, and pour the Lavender Simple Syrup into a container. Cool completely before using and refrigerating.
