To a teapot add the water and bring it to a boil over high heat.
Once the teapot screams, remove it from heat. Add tea bags, fresh mint leaves, and honey. Allow the tea to steep for 5 minutes.
Fill a large glass pitcher a third full with ice. Once the tea has steeped, remove tea bags and pour it into the pitcher over ice. Stir until the outside of the pitcher becomes frosty.NOTE: To keep the mint leaves from getting into your pitcher of tea place a fork over the opening of the teapot. Or place a fine mesh sieve over the pitcher before pouring.
Add the lemon juice and stir again.
Pour the Iced Mint Green Tea into glasses and garnish with mint and a slice of lemon.
