Elevate your fry game with these Greek style Lemon Feta Fries. Crispy waffle-cut fries are topped with melty cheese and a tangy lemon herb sauce for a quick and impressive dish.
Prepare waffle fries as preferred- baked, air fried, deep fried, etc.
In a small bowl whisk together extra virgin olive oil, lemon zest, lemon juice, garlic powder, dried oregano, dried parsley, salt, black pepper, and red pepper flakes. Set aside.NOTE: Refrigerate the sauce for at least 30 minutes or overnight to amplify the flavors.
Turn on oven broiler to low and place rack in the center of the oven.
Spread baked waffle fries on an unlined baking sheet and in a single layer. Top with mozzarella cheese and 4 ounces of feta cheese.
Place under broiler until the cheese is melted, bubbly, and slightly browned. It takes around 5 minutes but keep a close eye on it to ensure it does not burn.
Remove from oven and drizzle lemon olive oil sauce over the top of the fries.
Top with remaining feta cheese. Serve piping hot.

Reheating Instructions:
Arrange your leftover lemon feta fries in a single layer on a baking sheet. Reheat at 425°F for 5 minutes, or until crisp.

This recipe is written for year-round ease. But, for every 1 teaspoon of dried spices you can use 1 tablespoon of fresh. This works for the garlic, oregano, and parsley.
