Easy and delicious Strawberry Simple Syrup using whole or strawberry tops! It takes only minutes to make, has a multitude of uses, and tastes so much better than store-bought.
1cupstrawberries - whole and cut in 4's OR tops without the greens attached
INSTRUCTIONS
To a small saucepan add the sugar, water, and strawberries or strawberry tops (without greens attached). Heat over high, stirring occasionally, and bring to a boil.
Reduce heat to medium-low and allow it to simmer for 20 minutes, stirring occasionally. Once the syrup is deep red and slightly thickened, remove it from the heat and cover with lid. Allow it to cool to room temperature.
Once the Strawberry Simple Syrup is at room temperature, strain away the strawberry pulp and pour into an airtight glass jar or syrup container. Refrigerate between uses.

Freeze into cubes and then in a plastic bag, up to a year.
HOW TO MAKE A THICK AND RICH SYRUP FOR PANCAKES AND MORE
For a Strawberry Simple Syrup with the consistency of a pancake syrup you will want to use a 1:2 ratio of water and sugar (1/2 cup of water and 1 cup sugar). Follow all other directions as written.
