2cupsfresh herbs - washed, dried, and leaves removed from stems *
1cupsea salt - coarse
INSTRUCTIONS
Preheat oven to 250 °F. Line a baking sheet with parchment paper and set aside.
In a food processor, chop the fresh herbs (leaves only) until broken down very fine. Add the coarse sea salt and blend until the two are combined and the salt has broken down into a fine consistency. NOTE: This may take several minutes depending on the power of blender and sharpness of blades.
Spread herb salt mixture onto the prepared baking sheet. Bake for 25 to 30 minutes until no moisture is left in the herb salt. Allow it to cool until room temperature.
Store in an airtight, glass spice jar or container for up to 2 years. It is best kept in a dry, dark, and cool spot.

If fine ground salt is used, be cautious on step 2. Only blend the herbs and salt together until combined or the salt will become dust.

Italian: oregano, basil, rosemary, thyme
Herbs de Provence: basil, marjoram, parsley, rosemary, tarragon, thyme
