To a shaker bottle add lemon juice, honey, lavender bitters and shake until well combined. Pour into coupe glasses.
Add sparkling rosé and top it off with club soda.
Garnish with a lemon slice and sip!

Recipe Variations:
SWAP THE SPARKLING ROSÉ for non alcoholic gin, champagne, tequila, or even vodka.
DECORATE THE RIM OF YOUR GLASS WITH LAVENDER BUDS. Simply roll the rim of your glass in honey and then in the lavender buds.
SUBSTITUTE LAVENDER BITTERS FOR LAVENDER SYRUP. If you do this you will want to substitute the honey for lavender syrup and omit the lavender bitters. If the mocktail is still too sweet, add more lemon juice or club soda.
