Whisk together dry ingredients. Add wet ingredients (except hot water). Whisk until almost combined. Add the warm water and whisk until smooth. Divide batter among 12 cupcake liners (no more than 2/3 full). Bake for 15 minutes. Cool completely.
Make my Not So Sweet Buttercream. Fold in freeze-dried strawberry powder. Place strawberry buttercream in a piping bag, Ziploc bag, or leave in the bowl.
1. Core the cupcakes (using a corer, piping tip, or knife). 2. Fill with strawberry jam 3. Frost with strawberry buttercream how you would like. 4. Top with a fresh strawberry.
