Salmon filet; 1lb Bread crumbs Pesto Minced garlic Cherry tomatoes Onion Olive oil Salt and pepper Lemon wedges
Preheat oven to 400° F and line a large baking tray with parchment paper. Place the salmon filet skin side down on the baking tray. Season with salt/pepper.
In a small bowl, combine bread crumbs pesto minced garlic
Sprinkle the mixture evenly over the salmon filet. Place cherry tomatoes and red onion around the salmon, drizzle with olive oil, and season with salt/pepper.
Bake 14-17 minutes or until the salmon flakes away easily with a fork. Serve with a lemon slice and on a bed of brown rice.
