Cajun Chicken and Cauliflower 4 chicken thighs 1 head cauliflower; large florets ⅓ cup olive oil 1 teaspoons salt 1 teaspoon pepper 1 tablespoon Cajun seasoning 2 teaspoons 21 Season Salute 4 teaspoons butter Chimichurri 1 cup parsley leaves; fresh 2 teaspoons dried oregano 1 tablespoon garlic 1 teaspoon salt ¼ teaspoon Chili powder ⅓ cup olive oil 2 ½ tablespoons red wine vinegar

Step 1

Preheat your oven to 450° F.  Toss together your chicken, cauliflower, olive oil, and seasoning. Throw it in the oven to bake for 30 minutes.

Step 2

To a food processor add your parsley, oregano, garlic, salt, and Chili powder. Chop until blended.   Stir in the olive oil and red wine vinegar. 

Step 3

Remove from the oven and let rest for 5 minutes. Top with Chimichurri.
