THE PACK AND FREEZE METHOD
Label your freezer bags: type of meat number of portions date frozen
STEP 1
Divide the bulk meat into portions and then into meals. Place meals into freezer bags and freeze.
STEP 2
Sanitize your station, cutting board, and knife between each cut of meat. Trim excess fat off of your proteins. Think about how you are going to use the meat; cube, debone, filet it before you freeze it.
