Add some excitement to your summer with these toasty and gooey Campfire Brownie Smores! All you need is graham crackers, brownies, and marshmallows. They are a fun and simple treat any age can make!
Campfire Brownie Smores
I have been feeling under the weather for the last few weeks and I thought to myself, what do I want?! What would make me feel better? Brownies was the answer! I was going to make brownies with mini marshmallows and graham crackers on the top but I had an even better idea. I would replace the chocolate in smores with a thick, fudgy, brownie! So much fun right?!

The Brownies
My go-to recipe is adapted from King Arthur Baking’s Fudge Brownie recipe. The difference is mine are in a smaller baking dish so they are thicker, they have more baking powder which makes them cakier, they have two types of cocoa, and less chocolate chips. They are super simple to make and taste way better than boxed brownies (personal opinion).
Prepare an 8×8 baking dish with parchment paper and non-stick cooking spray. By using the parchment paper it allows you to lift the brownies out of the tin making it easier to cut them and construct your smores later.
Start by melting the butter and sugar over high heat. When it is melted together and comes to a boil it will start to get a crystallized appearance, this is what gives brownies the shiny crackle layer on top when baked. When it does this remove it from the heat and set aside.
In a large bowl whisk together the eggs until they become pale in color. Add the two types of cocoa, vanilla, and salt and whisk until incorporated. Slowly add the butter/sugar mixture, whisking continually until incorporated.
Add the flour, baking powder, and semi-sweet chocolate chips. Fold with a spatula until just combined.
Pour into your prepared baking dish and bake for 25 to 28 minutes or until an inserted toothpick comes out clean. You can take them out sooner if you want a gooey rather than cakey brownie. Allow to cool to room temperature.

Ingredients
Campfire Brownie Smores
- 1 batch brownies
- marshmallows
- graham crackers
Brownies
- 1 cup granular sugar
- 1 stick unsalted butter
- 2 eggs
- ⅓ cup black cocoa
- ⅓ cup unsweetened cocoa
- ½ teaspoon salt
- ½ tablespoon vanilla extract
- 1 teaspoon baking powder
- ¾ cup flour
- ½ cup semi-sweet chocolate chips
Instructions
- Prepare an 8×8 baking dish with parchment paper and non-stick cooking spray. Set aside. Preheat oven to 350° F.
- Melt the granular sugar and unsalted butter in a small saucepan. Allow it to come to a boil and cook for two to three minutes. Remove from heat.
- In a separate large bowl, whisk together eggs, cocoa, salt, and vanilla extract.
- Slowly add warm butter/sugar mixture to your egg mixture and keep whisking until smooth and incorporated.
- Add the flour, baking powder, and chocolate chips. Fold until incorporated.
- Pour brownie batter into the prepared 8×8 dish. Bake for 25-28 minutes (depending on how gooey you like them).
- Once cooled to room temperature remove from pan and cut into 9 equal squares.
- Construct the smores to your liking.
